Berry green chia porridge

It’s plain ugly and green  but oh so delicious and bursting with goodness. It’s a porridge with a difference, plant based, vegan and paleo.
Free of refined sugar, grains, nut free (don’t use almond milk) bursting with antioxidants and vitamins. What a great way to start the day and especially on cool autumn days or cold winter mornings than with this Berry green chia porridge.

 

½ cup Kale or Baby Spinach leaves
400 ml Almond, coconut or any plant based milk
½ cup frozen Blueberries
½ teaspoon Vanilla Extract
1 small Banana
½ cup Chia Seeds

TOPPINGS

Fresh Berries
Coconut Yogurt
Cinnamon (optional)
Pure Maple Syrup (optional)

METHOD

In a blender add kale or spinach, milk, blueberries, vanilla, and banana. Blend till smooth.

Pour blended mixture into medium saucepan. Put onto stove on a high heat.

Slowly sprinkle in the chia seeds while stirring , making sure mixture is lump free. Keep stirring until mixture comes to boil. Put lid on saucepan, turn off heat and allow to sit for 2-3 minutes.

Spoon mixture evenly into bowls. Top with some extra blueberries, a dollop of coconut yogurt and a pinch of cinnamon and/ a light drizzle of maple syrup.

Serves 3 – 4
