Blueberry Nice Cream

Whats the difference between a smoothie bowl and a nice cream you may wonder?  Well a smoothie bowl is just a thicker version of a smoothie whereas a nice cream is closer in texture to soft serve ice cream and has frozen bananas as it’s base. 
My version in this blueberry nice cream recipe is a cashew and banana base.  It’s one of my first healthy recipes I created many years ago.
With the added bonus of blueberries that are high in antioxidants it makes for a delicious light meal or as a cool snack. Blueberries contain a flavonoid called anthocyanin which gives them their distinct blue colour and well as their powerful antioxidant effect. 
This plump little blue berry contains iron and zinc which help maintain the strength and elasticity of bones and joints. Vitamin C which helps collagen to improve it’s ability to smooth wrinkles and enhance the overall texture of skin.
They contain potassium, calcium and magnesium which are  thought to help lower blood pressure. Some other health benefits are that they help prevent constipation by maintaining  regularity due to their fibre content. Also being high fibre they reduce appetite thus reducing our overall calorie intake.

BLUEBERRY NICE CREAM

1 cup Raw Cashews, soaked minimum 2 hours or overnight
2-3 Bananas, frozen
1/2 cup frozen Blueberries
1/4 – 1/2 cup  full fat tinned Coconut Milk
1/2 teaspoon Vanilla Extract or Vanilla Bean Powder
Juice of 1/2 Lime

 

 

METHOD

Drain and rinse cashews and put into the bowl of food processor.

Add bananas, blueberries, 1/4 cup coconut milk, vanilla and lime juice and process till smooth.  Add extra coconut milk to reach the thickness you like.

Divide mixture between bowls and top with extra berries, fruit and/or granola. Serve.  Serves 2 for breakfast or 4 as a treat.
