LAMINGTON SMOOTHIE
Lamington Smoothie
I don’t know about you but for me Lamingtons are one of my childhood memory favourites. Mum would sometimes bring us a treat after work and yep we would devour them like little termites. Then there were the school fetes . The cake stall would always have lamingtons for sale. Cake layers sandwiched together with raspberry jam then dipped in chocolate and rolled in coconut, could there be anything more tantalising than this? My lamington smoothie hits the spot!
Chocolate, coconut and raspberries are a match made in heaven, an ideal flavour combination and what makes it even better is when its in a healthy smoothie.
Raw cacao full of antioxidants, chia seeds with their omega 3 fatty acids, raspberries low in sugar but high in fibre , vitamins, minerals and antioxidants, coconut with high manganese and bananas with their magnesium. Unlike the dead calories of that sugar laden cake of yesteryear, this drink is brimming with life. I know which I would choose, how about you?
VANILLA RASPBERRY SWIRL
400 ml Coconut Milk (I use MILKLAB )
1 teaspoon Vanilla Extract
125 grams Fresh Raspberries
1/2 cup Coconut Yogurt, natural flavour (I use Coyo or Aldi Brands)
2 tablespoons Maple Syrup
CHOCOLATE CHIA SMOOTHIE
600 ml Coconut Milk ( I use MILKLAB )
2 tablespoons Chia Seeds
1/4 cup Cacao Powder
2 frozen Bananas
2 tablespoons Maple Syrup
TO DECORATE
Fresh Raspberries, Coconut Flakes, Cacao Nibs
METHOD – VANILLA RASPBERRY SWIRL
Into blender add the coconut milk, vanilla, raspberries, coconut yogurt and maple syrup and blend until smooth then pour evenly into glasses
METHOD – CHOCOLATE CHIA SMOOTHIE
Put into the blender the coconut milk, chia seeds, cacao, bananas and maple syrup and blend until smooth.
Slowly pour the chocolate smoothie into the same glasses, in the centre. Do not stir.
Decorate with 3-4 fresh raspberries, coconut flakes and / or cacao nibs. Serve.
